Instructions

Roast sweet potatoes

Toss cubed sweet potatoes with olive oil, salt, and pepper. Roast at 400°F for 20 minutes.

Make chimichurri

Finely chop parsley and garlic. Mix with red wine vinegar, olive oil, red pepper flakes, and a pinch of salt.

Grill the steak

Season steaks generously with salt and pepper. Grill 4 minutes per side for medium-rare. Let rest for 5 minutes.

Use a meat thermometer — 130°F for medium-rare. The steak continues cooking while resting.

Grill asparagus
