Instructions
Step 1
Line an 8x8 inch baking dish with parchment paper, leaving overhang on two sides for easy removal.
Step 2
In a large bowl, combine rolled oats, chopped almonds, dried cranberries, ground flaxseed, and salt. Mix well.
Step 3
In a small saucepan over low heat, warm the peanut butter and honey, stirring until smooth and combined. Remove from heat and stir in vanilla extract.
Step 4
Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated. If using chocolate chips, fold them in now.
Step 5
Transfer the mixture to the prepared baking dish. Press down firmly and evenly using a spatula or your hands (lightly oiled to prevent sticking).
Step 6
Refrigerate for at least 2 hours, or until firm. Once set, lift out using the parchment paper and cut into 12 bars.
Step 7
Store in an airtight container in the refrigerator for up to 2 weeks, or wrap individually for car travel. They are stable at room temperature for a few days, but refrigeration keeps them firm.
