Preheat oven
Crank your oven as high as it goes — ideally 500°F/260°C. Place a baking stone or inverted baking sheet inside.
Shape the dough
Stretch dough into a 12-inch circle on a floured surface. Transfer to parchment paper.
Sauce and top
Spread crushed tomatoes in a thin layer. Tear mozzarella into chunks and distribute evenly. Drizzle with olive oil.
Bake
Slide pizza onto the hot stone. Bake for 8-12 minutes until crust is golden and cheese is bubbling with brown spots.
Watch it like a hawk after minute 8 — the line between perfect and burnt is thin at high heat.
Finish
Remove from oven. Scatter fresh basil leaves, drizzle more olive oil, and slice immediately.
