Instructions

Step 1

Toast the sourdough bread until golden and crispy. Set aside on plates.

Step 2

While bread toasts, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until creamy but slightly chunky.

Step 3

Add lemon juice, a pinch of salt, and black pepper to the mashed avocado. Mix well and set aside.

Step 4

In a medium bowl, whisk together eggs, milk or cream, 1/4 tsp salt, and black pepper until well combined.

Step 5

Melt 1 tbsp butter in a non-stick skillet over medium-low heat. Pour in the egg mixture.

Step 6

Let eggs sit for 30 seconds, then gently push them from the edges toward the center with a spatula. Repeat every 30 seconds until eggs are softly set but still moist, about 3-4 minutes.

Step 7

Remove from heat immediately and stir in remaining 1 tbsp butter until melted.

Step 8

Spread the avocado mixture evenly on the toasted bread slices.

Step 9

Divide scrambled eggs between the two avocado toasts. Garnish with chopped chives and red pepper flakes.
