Toast the sourdough bread until golden and crispy. Set aside on plates.

While bread toasts, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until creamy but slightly chunky.

Add lemon juice, a pinch of salt, and black pepper to the mashed avocado. Mix well and set aside.

In a medium bowl, whisk together eggs, milk or cream, 1/4 tsp salt, and black pepper until well combined.

Melt 1 tbsp butter in a non-stick skillet over medium-low heat. Pour in the egg mixture.
