Instructions

Step 1

Heat oil in a large Dutch oven over medium-high heat. Brown beef cubes in batches (about 3-4 minutes per side) and set aside. Do not overcrowd.

Step 2

Reduce heat to medium. Add onions and cook until softened, about 5 minutes. Add garlic, cook 1 minute.

Step 3

Stir in paprika, caraway seeds, salt, pepper, and tomato paste. Cook 2 minutes until fragrant.

Step 4

Return beef to pot. Add broth, carrots, potatoes, bell pepper, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer 1.5 hours until beef is tender.

Step 5

Remove bay leaf. Stir in vinegar. Adjust seasoning. Garnish with parsley if desired.
