Make the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, oregano, salt, and pepper until well combined. Set aside.

Prepare the base ingredients: Cook quinoa according to package instructions (if using), then let cool. Rinse and drain chickpeas. Wash and chop all vegetables as specified.

Layer the jars: For each of 5 wide-mouth mason jars (32 oz/1 quart size), add ingredients in this exact order from bottom to top: 2 tablespoons dressing, chickpeas, cherry tomatoes, cucumber, red onion, bell peppers, quinoa, and finally mixed greens on top. Press down gently to fit everything.
Step 4
Add optional toppings: If using feta cheese or avocado, add these on top of the greens just before serving to prevent sogginess.
Step 5
Seal and store: Tightly screw on the lids. Store jars upright in the refrigerator for up to 5 days.
