Instructions
Step 1
In a medium bowl or directly in two 16-ounce mason jars, combine the rolled oats, milk, Greek yogurt, chia seeds, honey or maple syrup, and vanilla extract (if using). Stir well until everything is evenly mixed.
Step 2
Cover the jars or bowl tightly with lids or plastic wrap. Refrigerate for at least 6 hours or overnight, allowing the oats to soften and the mixture to thicken.
Step 3
For the berry compote: In a small bowl, mash the mixed berries with a fork until slightly broken down. Stir in the lemon juice. If using frozen berries, let them thaw slightly first. No cooking is needed—the natural juices will create a compote-like texture.
Step 4
In the morning, give the overnight oats a good stir. If the mixture is too thick, add a splash of milk to reach your desired consistency.
Step 5
Divide the overnight oats between two serving bowls or eat directly from the jars. Top each serving with half of the berry compote.
Step 6
Add optional toppings like sliced almonds, coconut flakes, or extra fresh berries. Serve immediately. Store any leftovers in the refrigerator for up to 2 days.
