Step 1
Pat salmon fillets dry with paper towels and season both sides with ½ tsp salt and black pepper.

Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and 1 tbsp butter. Once butter melts and foams, add salmon fillets skin-side down (if using skin-on).
Step 3
Cook salmon for 4-5 minutes without moving until golden brown. Flip carefully and cook for another 3-4 minutes until cooked through but still moist. Remove salmon to a plate and cover loosely with foil.

Reduce heat to medium. Add remaining 2 tbsp butter to the same skillet. Once melted, add minced garlic and cook for 30 seconds until fragrant but not browned.

Add lemon juice to the skillet and stir to combine with the butter and garlic. Cook for 1 minute to reduce slightly.

Add spinach to the skillet with remaining ½ tsp salt. Cook for 2-3 minutes, stirring frequently, until spinach is wilted.

Return salmon to the skillet, spooning some sauce over the top. Cook for 1 minute to reheat.

Garnish with chopped parsley and serve immediately with lemon wedges on the side.
