Heat olive oil in a non-stick skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, until golden and tender, about 4 minutes.

Add spinach, garlic powder, salt, and pepper. Cook, stirring, until spinach wilts, about 1 minute. Remove filling from skillet and set aside.

Wipe skillet clean. Place tortilla in the skillet over medium heat. Sprinkle half the cheese over one half of the tortilla. Top with mushroom-spinach mixture, then remaining cheese. Fold tortilla in half.

Cook until golden brown on the bottom, about 2 minutes. Carefully flip and cook until the other side is golden and cheese is melted, about 2 minutes more.
Step 5
Transfer to a cutting board and cut into wedges. Garnish with cilantro if desired. Serve immediately with sour cream and salsa.
