Step 1

Preheat oven to 375°F (190°C).

In a large bowl, whisk together eggs, milk, dill, chives, parsley, salt, and pepper until well combined.

Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add shallot and cook for 2-3 minutes until softened.
