Instructions

Step 1

In a medium bowl, combine chicken pieces with 2 tablespoons of soy sauce. Let marinate for 10 minutes while you prep vegetables.

Step 2

Prepare all vegetables: cut broccoli into florets, slice carrots into thin rounds, slice bell pepper and onion into strips, mince garlic, and grate ginger.

Step 3

In a small bowl, mix remaining soy sauce, cornstarch, and water to create the sauce. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add chicken and cook for 5-6 minutes until browned and cooked through. Remove chicken and set aside.

Add remaining 1 tablespoon of oil to the same pan. Add garlic and ginger, stir for 30 seconds until fragrant.
