Step 1

Make the pastry: In a food processor, pulse flour and salt. Add cold butter and pulse until mixture resembles coarse crumbs. Gradually add ice water until dough just comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.

Step 2

Caramelize onions: In a large skillet over medium-low heat, melt butter with olive oil. Add sliced onions, salt, pepper, and sugar (if using). Cook, stirring occasionally, for 40-45 minutes until deeply golden brown and caramelized. Stir in thyme during last 5 minutes. Let cool slightly.
