Instructions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add onion and red bell pepper; cook until softened, about 5 minutes.

Step 3

Stir in garlic, cumin, smoked paprika, and oregano; cook 1 minute until fragrant.

Step 4

Add rice and stir to coat with spices, cooking 1 minute.

Step 5
