Step 1
Preheat oven to 375°F (190°C).
Step 2
In a large bowl, combine matzo farfel and hot water. Let sit for 5 minutes until softened, then drain excess water.

In a skillet over medium heat, heat 2 tablespoons olive oil. Sauté onion and celery until softened, about 5 minutes. Add to matzo farfel.

Stir in beaten eggs, salt, pepper, thyme, rosemary, and parsley. Mix well.

Pat chicken dry with paper towels. Stuff the cavity loosely with the matzo mixture. Secure legs with kitchen twine and tuck wing tips under.

Rub chicken all over with schmaltz or olive oil. Season with paprika, additional salt and pepper.

Place chicken on a rack in a roasting pan. Pour chicken broth into the bottom of the pan (not over the chicken).
Step 8
Roast for 1 hour to 1 hour 15 minutes, until skin is golden and internal temperature reaches 165°F (74°C) in the thigh.
Step 9
Let rest 10 minutes before carving. Serve with remaining stuffing on the side.
