Instructions

Step 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Season chicken breasts with 1/2 tsp salt, black pepper, paprika, and Italian seasoning on both sides.

Step 3

In a shallow dish, combine almond flour and 1/4 cup parmesan cheese. Dredge each chicken breast in the mixture, pressing gently to adhere.

Heat 1 tbsp butter and olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side until golden brown. Transfer chicken to prepared baking sheet and bake for 15-18 minutes until internal temperature reaches 165°F (74°C).

While chicken bakes, place asparagus on the same baking sheet, drizzle with 1 tbsp melted butter, and season with remaining salt. Roast alongside chicken for the last 10 minutes until tender-crisp.

For the sauce: In the same skillet used for chicken (don't clean it), melt remaining 1 tbsp butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
