Step 1

Bring a large pot of generously salted water to a rolling boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

While pasta cooks, heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add mushrooms in a single layer (work in batches if needed) and cook undisturbed for 3-4 minutes until golden brown on one side.

Stir mushrooms and continue cooking for 5-6 minutes until deeply browned and tender. Season with salt and pepper, then transfer to a plate.

In the same skillet, melt remaining 2 tablespoons butter over medium heat. Add shallots and cook for 3-4 minutes until softened. Add garlic and thyme, cooking for 1 minute until fragrant.
