Instructions

Step 1

Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish lightly.

Step 2

Cook pasta according to package directions until al dente (about 7-8 minutes). Drain and set aside.

Step 3

While pasta cooks, heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.

Step 4

Add ground beef to the skillet, breaking it up with a spoon. Cook for 6-8 minutes until browned. Drain excess fat if needed.

Step 5

Add minced garlic, oregano, salt, and pepper to the beef mixture. Cook for 1 minute until fragrant.

Step 6

Stir in diced tomatoes (with juices), tomato sauce, beef broth, and frozen vegetables. Bring to a simmer and cook for 5 minutes.

Step 7

Combine the cooked pasta with the beef mixture in the skillet. Mix well to combine.

Step 8

Transfer half of the mixture to the prepared baking dish. Sprinkle with ½ cup of shredded cheese. Add remaining mixture on top.

Step 9

Cover the baking dish with aluminum foil and bake for 20 minutes.

Step 10

Remove foil, sprinkle remaining ½ cup cheese on top, and bake uncovered for 5-10 minutes until cheese is melted and bubbly.

Step 11

Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
