Instructions

Step 1

Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish or prepare freezer-safe containers if freezing immediately.

Step 2

Cook pasta according to package directions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt 3 tablespoons of butter over medium heat. Whisk in flour and cook for 1 minute until golden.

Step 4

Gradually whisk in milk and broth until smooth. Cook for 3-4 minutes, stirring constantly, until thickened.

Step 5

Remove from heat and stir in 1.5 cups of cheddar cheese, sour cream, Dijon mustard, garlic powder, onion powder, salt, and pepper until cheese is melted and sauce is smooth.

Step 6

In a large bowl, combine cooked pasta, leftover protein, leftover vegetables, and cheese sauce. Mix gently until evenly coated.

Step 7

Transfer mixture to prepared baking dish. Sprinkle remaining 0.5 cup cheddar cheese over the top.

Step 8

In a small bowl, melt remaining 1 tablespoon butter and mix with panko breadcrumbs. Sprinkle breadcrumb mixture over the cheese.

Step 9

Bake uncovered for 30-35 minutes until bubbly and golden brown on top. Let rest for 10 minutes before serving.

Step 10

For freezer prep: Assemble casserole but do not bake. Cover tightly with plastic wrap and foil. Freeze for up to 3 months. Thaw overnight in refrigerator before baking as directed.
