Instructions

Step 1

Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water, then drain.

Step 2

While pasta cooks, make the pesto: In a food processor, combine basil, parsley, mint, garlic, pine nuts, Parmesan, lemon juice, salt, and pepper. Pulse until finely chopped.

Step 3

With the processor running, slowly drizzle in olive oil until the pesto is smooth and well combined. Taste and adjust seasoning.

In a large skillet over medium heat, add cherry tomatoes and cook for 2-3 minutes until slightly softened. Add a splash of pasta water if needed to prevent sticking.

Add the drained pasta to the skillet with the tomatoes. Add the pesto and toss well to coat, adding pasta water a little at a time until the sauce reaches desired consistency.

Step 6

Serve immediately, garnished with extra Parmesan and fresh herbs if desired. Sprinkle red pepper flakes for heat.
