Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water, then drain.

While pasta cooks, make the pesto: In a food processor, combine basil, parsley, mint, garlic, pine nuts, Parmesan, lemon juice, salt, and pepper. Pulse until finely chopped.
