Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the cubed chicken, season with 1/4 teaspoon salt and black pepper, and cook for 5-6 minutes until browned and cooked through. Remove chicken from skillet and set aside.
