Step 1

Preheat a griddle or large skillet over medium-high heat until very hot (about 400°F/200°C). Lightly brush with vegetable oil.

Step 2

Divide the ground beef into 4 equal portions (4 oz each). Gently form into loose balls without overworking the meat.

Step 3

Place one beef ball on the hot griddle and immediately press down firmly with a spatula to form a thin patty, about 1/4 inch thick. Repeat with remaining balls, leaving space between patties.

Step 4

Season the tops of the patties with salt and pepper. Cook for 2-3 minutes until edges brown and juices rise to the surface.

Step 5

Flip the patties using a thin spatula. Immediately place a slice of American cheese on each patty. Cook for another 1-2 minutes until cheese melts and patties are cooked through (internal temperature 160°F/71°C).

Step 6

While patties cook, lightly toast the hamburger buns on the griddle for 30-60 seconds until golden.

To assemble: Spread 1 tablespoon ketchup and 1 tablespoon mustard on the bottom bun. Add the cheeseburger patty, then top with 4 pickle slices and a sprinkle of chopped onion. Cover with top bun.
