Roasted Asparagus and Potatoes

Step 1
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, toss halved potatoes with 2 tbsp olive oil, minced garlic, salt, pepper, thyme, and paprika until evenly coated.

Spread potatoes in a single layer on the prepared baking sheet. Roast for 15 minutes.
Step 4
Meanwhile, toss asparagus pieces with remaining 1 tbsp olive oil and a pinch of salt.

After 15 minutes, remove baking sheet from oven. Add asparagus to the sheet, stirring gently to combine with potatoes.
Step 6
Return to oven and roast for another 10-12 minutes, until potatoes are tender and asparagus is bright green and slightly charred.
Step 7
Remove from oven. Drizzle with lemon juice and sprinkle with Parmesan cheese, if using. Serve warm.
