Press the tofu: Wrap the tofu block in paper towels, place a heavy plate on top, and let drain for 10 minutes to remove excess water. Cut into 1-inch cubes.

Make the sauce: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Set aside.

Prepare vegetables: Cut broccoli into florets, slice the bell pepper thinly, julienne the carrots, and chop the green onions, keeping white and green parts separate.
