Instructions

Step 1

Prepare the seitan 'beef': In a bowl, mix vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, and onion powder. Add soy sauce, tomato paste, and vegetable broth; knead for 3-5 minutes until elastic. Shape into a 20cm log, wrap in foil, and steam for 30 minutes. Let cool.

Step 2

Make the mushroom duxelles: Heat olive oil in a pan over medium heat. Sauté onion until soft, add garlic and mushrooms; cook until liquid evaporates. Add white wine, cook until absorbed. Season with salt and pepper; cool.

Step 3

Assemble the Wellington: Preheat oven to 200°C (400°F). Roll out puff pastry on a floured surface. Brush seitan log with Dijon mustard, then spread mushroom duxelles evenly over it. Place in center of pastry, wrap tightly, sealing edges with water. Place seam-side down on a baking sheet.

Step 4

Bake: Brush pastry with plant-based milk. Bake for 30-35 minutes until golden brown. Let rest for 10 minutes before slicing. Garnish with thyme and serve warm.
